In 1927, Carlo and his brother Salvatore began milling their olives, kicking off La Valle’s long and festive history at their small mill in rural San Mauro Marchesato. Olive pressing has always been sacred to them, and their olive oil hasn’t gone unnoticed, earning various local (and not only) accolades–an apt reward for their ardent efforts to protect the territory.
The estate's calcareous clay and sandy soils are rich in all the macro- and micro-elements essential for olive tree cultivation, thanks to the Mediterranean microclimate that characterises its position halfway between Sila National Park and the Ionian coast.

In the agronomic lexicon, 'Cultivars' refers to cultivated olive tree varieties.
La Valle is home to 150 hectares of varied olive tree species, like Carolea, Leccino, Biancolilla, Nocellara Messinese, and Frantoio. Coratina, Itrana, and Moraiolo are among the newly planted species.
Don Ciccio, made from olives sourced according to Organic Farming guidelines, is the estate’s flagship and Capovaticano Resort’s favourite. The medium-to-intense fruity blend is fragrant with distinct vegetal aromas and packs pronounced spiciness and bitterness, two flavours that embody the Calabrian soul.
